On White Day, celebrated a few weeks later, Japanese men extend gifts to the women they love, most commonly flowers.

Ever notice that your chocolate looks as if it’s frozen—that a tinge of white has marred its otherwise solid chocolate appearance? That means the chocolate was not carefully monitored for even temperatures during production.

Chocolate contains sugar and fat. Both have the tendency to absorb smells and odors from things around them. So when you store your leftover chocolate in a cool, dark place protect it from other foods, like onions.

Percentages on a chocolate bar represent the sugar to cacao ratio. Some people prefer chocolate with a very high cacao content (up to 99%); others prefer a middle of-the-road bar with about 55-70% cacao. The percentages tell how chocolaty the bar will taste. The more cacao, the less sugar there is, and the healthier the bar. In this case higher is better: a higher percentage means less sugar!
